SANTA’S CHRISTMAS EVE VISIT
It would hardly be Christmas without a visit from Santa Claus himself on Christmas Eve. Why not make his Christmas merry and bright by leaving out a special dram of Laphroaig this year?

LAPHROAIG CHRISTMAS CAKE
Christmas and whisky go hand in hand, especially in a Christmas cake. Laphroaig Lore has intriguing, fruity flavours that complement the rich, dried fruits in this mixture perfectly, so why not swap the brandy for whisky this year?
Christmas cakes take a while to make from beginning to end, but we’ve always said that great things take time and are worth waiting for – just like our whisky.
To make Laphroaig part of your Christmas cake, here’s what you’ll need:
200g raisins
350g glacé cherries
475g currants
350g sultanas
Zest of 2 oranges
150ml Laphroaig Lore or Laphroaig 10 Year Old
Rinse and halve your cherries and make sure they’re fully dry, then add all the fruits and zest into a bowl. Pour over the Laphroaig, mix, and leave to stand overnight.
Once your fruit has fully soaked in the whisky, it’s time to make the batter for the cake. First grease and line a 23cm/9in deep tin with a double layer of greased greaseproof paper, then preheat the oven to 140C/120C Fan/Gas 1. For the cake batter, you’ll need:
250g softened butter
250g light or dark muscovado sugar
4 large eggs
1 tbsp black treacle
75g chopped almonds
275g plain flour
1½ tsp mixed spice
Add the butter, sugar, eggs, treacle and almonds together in a large mixing bowl and beat together well. Mix in the flour and spice until completely blended and then stir in your whisky-soaked fruit. Spoon your mixture into your cake tin, smooth off the surface with a spatula, and bake for 4 to 4 and a half hours or until golden brown and firm to the touch.
When the cake is cooled completely, remove it from the tin but keep it in the greaseproof paper – this will help keep the cake moist. Pierce the cake at intervals with a skewer and then feed with a little extra Laphroaig. Store your cake in an airtight container and, depending how strong you want the flavour, feed with more whisky at weekly or bi-weekly intervals.
About a week or so before you want to serve your Laphroaig Christmas cake, take it out of your container and decorate. You’ll need some jam (pick your favourite flavour!), some ready-rolled marzipan and ready-rolled Royal icing.
Brush the cake’s surface with the jam and then cover with a thin layer of marzipan. Leave this to dry out a little for a few days under cover of some greaseproof baking paper, and then cover with a thin layer of the Royal icing.
After that, decorate the top with a sprig or two of holly, and enjoy a slice with a dram of your favourite Laphroaig.
